Sweet potato bites with tomato and guacamole

When my entire country and I cheered on the Dutch football team in the World Cup I had orange food on my mind. What could I eat/serve that was orange and delicious at the same time? I decided on these small sweet potato bites with tomato and guacamole.

If you feel like having pizza bites but actually want something healthier this might be the best solution. It’s sort of like eating chips made out of sweet potato. I find them delicious, my guests thought they were incredible. What do you think?


  • 1 sweet potato
  • 3 or 4 tomatoes
  • (lactose free) grated cheese (I always choose real Dutch Gouda)
  • Homemade guacamole

Preparation of the sweet potato bites:

Pre heat the oven to 180 C/350 F. Rinse the sweet potato, cut it into thick slices. Repeat these steps but use the tomatoes. Place some parchment paper on a baking tray and put the potato slices on it. Cover up these slices with the tomato slices and top it off with some grated cheese.

Bake for ±15 minutes.

Prepare your guacamole. Take the bites out of the oven and use the guacamole as a topping!
