Sweet potato balls with kale

There are not that many activities that give me the same relaxed feeling as cooking. I can easily spend hours in the kitchen and be completely stressless. Trying new combinations and new recipes are my favorite things to do. But people often ask me.. ‘where do you get your inspiration from?’ That’s fairly easy: it’s the good old Instagram (Yes, you can follow me right HERE) and the other recipes on my site. It’s the falafel that made me think ‘What else can I roll into balls and place in the oven?’. I wanted something that’s full of good carbs and preferably some veggies. Let me introduce you to these sweet potato balls with kale. I hope you’ll like them just as much. Will you let me know?

And let’s talk about kale for a second. What’s up with everybody eating kale crisps? It’s like people have run out of crisp options. I must admit that I do love me some vegetable crisps but just not kale. I’ll put kale into everything else instead (for example this delicious kale smoothie)!

Zoete aardappelballetjes

Ingredients for ±12 sweet potato balls with kale

  • 2 sweet potatoes
  • 2 tbsp coconut milk
  • 70 gr. (1 cup) kale (chopped)
  • 1/2 yellow onion
  • 1 tsp garlic powder
  • 1 tsp parsley (fresh or dried)
  • 1 tsp oregano (fresh or dried)
  • Salt and pepper
  • Optional: sesame seeds

How to prepare sweet potato balls with kale:

Pre heat the oven to 200 C / 400 F and cover a baking tray with parchment paper.

Steam or cook the sweet potatoes until they are tender.

Pour off the water.

Puree the sweet potatoes and stir in all the ingredients.

You’re at the point of rolling it into balls now. I’d say just go for it and wet your hands and roll small portions into balls OR just grab two spoons and use them. It’s up to you.

Place them on the parchment paper, sprinkle some sesame seeds on top of it and place them in the oven for about 20 minutes.

They should feel a little bit more firm.
