Sweet potato balls with kale
There are not that many activities that give me the same relaxed feeling as cooking. I can easily spend hours in the kitchen and be completely stressless. Trying new combinations and new recipes are my favorite things to do. But people often ask me.. â€˜where do you get your inspiration from?â€™ Thatâ€™s fairly easy: itâ€™s the good old Instagram (Yes, you can follow me right HERE) and the other recipes on my site. Itâ€™s the falafel that made me think â€˜What else can I roll into balls and place in the oven?â€™. I wanted something thatâ€™s full of good carbs and preferably some veggies. Let me introduce you to these sweet potato balls with kale. I hope youâ€™ll like them just as much. Will you let me know?
And letâ€™s talk about kale for a second. Whatâ€™s up with everybody eating kale crisps? Itâ€™s like people have run out of crisp options. I must admit that I do love me some vegetable crisps but just not kale. Iâ€™ll put kale into everything else instead (for example this delicious kale smoothie)!
Ingredients for Â±12 sweet potato balls with kale
- 2 sweet potatoes
- 2 tbsp coconut milk
- 70 gr. (1 cup) kale (chopped)
- 1/2 yellow onion
- 1 tsp garlic powder
- 1 tsp parsley (fresh or dried)
- 1 tsp oregano (fresh or dried)
- Salt and pepper
- Optional: sesame seeds
How to prepare sweet potato balls with kale:
Pre heat the oven to 200 C / 400 F and cover a baking tray with parchment paper.
Steam or cook the sweet potatoes until they are tender.
Pour off the water.
Puree the sweet potatoes and stir in all the ingredients.
Youâ€™re at the point of rolling it into balls now. Iâ€™d say just go for it and wet your hands and roll small portions into balls OR just grab two spoons and use them. Itâ€™s up to you.
Place them on the parchment paper, sprinkle some sesame seeds on top of it and place them in the oven for about 20 minutes.
They should feel a little bit more firm.
