Sushi with sun-dried tomatoes and basil

Sushi sushi sushi! Hello my name is Carlijn and I am addicted to sushi. I try to eat it at least once a week, wether it’s homemade, take away or in a sushi restaurant. But just like other dishes I like to try some different sushi combinations just to keep it interesting. For example, I’ve had sushi with strawberries but now it’s time for sushi with sun-dried tomatoes, basil and lactose free cream cheese! I know you’ll love it, so here we go.

Ingredients for sushi with sun-dried tomatoes:

  • Sushi rice
  • Sun-dried tomatoes (preferably not drowned in oil)
  • Fresh basil
  • Lactose free cream cheese
  • Nori leaves

Prepare the sushi rice like you normally do. I always use a rice cooker and don’t add sugar and/or vinegar.

Cut the nori leaves in half.

Spread the rice on 2/3 of the nori leaf and spread some cream cheese on it. Put the fresh basil on top of the cream cheese. Cut the sun-dried tomatoes in strips and put them onto the basil.

Roll up you nori leaf, chop into equal pieces and enjoy your sushi with sun-dried tomatoes!

VARIATION: You can replace the basil with fresh mint.
