Superfood bar with goji berries and dates

The last couple of months I have been working out but I seem to lack a lot of energy when I’m done. That’s why my friend suggested making my own protein bars. I decided on a superfood bar with goji berries and dates!

Ingredients for 5 bars:

  • 200 gr. dates
  • 50 gr. goji berries
  • 1 el. coconut fiber
  • 40. gr. coconut oil
  • Small baking tray
  • Cling film

Cut the dates and goji berries into small pieces (or put them in the processor).

Mix the coconut fiber through the dates. Melt the coconut oil and stir through the mixture.

Cover the oven dish with cling film and pour the mixture into the oven dish. Grab a spoon and firmly press the mixture until it looks pressed properly. Put the baking tray in the fridge until the oil hardens.

Once it’s solid again you can cut it into pieces. Wrap each single superfood bar in cling film and store them in the fridge.
