Rice paper stuffed with tuna, avocado, chives and cucumber
Today I had the plan toÂ make some stuffed wine leaves but it turned into rice paper bites as I couldn’t seem to get the leaves anywhere! So rice paper it was but what on earth was I going to put in it? I decided on a combination I always use for sushi (after all.. rice paper is made from rice) as that probably was going to work out well! And it did! I hereby introduce you to rice paper stuffed with tuna, avocado, chives and cucumber.
Recipe for 10 rolls:
- 10Â rice papers
- 1/2 avocado
- 1 can of tuna (on water)
- 1 tsp. mayonnaise
- squeeze of lime juice
- pinchÂ of fresh black pepper
- soy sauce (gluten free)
Cut the avocado, cucumber and chives into strokes. Open the can of tuna, let it drain properly and place it in a bowl. Add the mayonnaise, lime juice and black pepper and mix it well.
Grab a deep plate/soup plate/bowl with lukewarm water. Place 1 rice paper in there and wait at least 10 seconds before it’s gone soft. Take out the rice paper (with both hands, it might rip) and place it on a chopping bord, dab it softly with a clean tea towel. Place the filling in the center, fold the bottom bit over the filling, fold the sides and rol it up. Repeat this!
You can serve this straight away or just store them (as there’s avocado in it don’t store it too long)
Delicious with a bit of soy sauce on the side.
