Paleo banana bread

You probably already know that I try to follow the paleo diet. I do that because I feel much better when I eat according to the paleo lifestyle. But, it has its downsides don’t you think? For example, I find it quite difficult to keep a certain variety in my diet. At one point I just need something sweet and delicious and still paleo.

Bananas are great to bake with, they are very sweet and if you combine them with chocolate, it’s even better! I happen to love this paleo banana bread as it’s easy to make, delicious and you can easily store slices in the freezer and take em out when you’re on your way out!

Did I already tell you that I’ve put some dark (70%) chocolate in there as well? Nope? Well… I’ve put some chocolate in there! So you’ve got bananas and chocolate. And some chopped walnuts. And some other ingredients of course. Check out the recipe!

Instructions
  1. Preheat the oven to 180C/350F degrees.
  2. Melt the coconut oil and mix together with the bananas and eggs. Make sure that the coconut oil isn't too hot.
  3. Add the arrowroot, coconut flour, baking soda, vanilla and cinnamon to the mixture and combine.
  4. Chop the walnuts and gently scoop these (and the chocolate chips) through the mixture.
  5. Pour into a cake mold that's covered with parchment paper and place in the oven for about ±50 minutes. Keep an eye on the cake!
  6. Let the cake cool down and enjoy!
