  1. Grab to small pots and two bowls (which you’ll heat over simmering water). Separate the yolks from the egg whites and place the yolks together with the sugar and red wine in a bowl over simmering water. Pour the whites in a clean and fat free bowl. Place the chocolate in the other bowl and wait until it melts.
  2. Whisk the egg yolks until it looks fluffy and a bit creamy (you’ll get a great purple-ish colour due to the red wine). Add the chocolate.
  3. Whip the egg whites until they are stiff. Gently stir them into the chocolate mixture. Make sure you stir as less as possible!
  4. Divide over four small glasses and place in the fridge for at least 3 hours. Garnish the dairy free chocolate mousse with a bit of extra chocolate or a cherry!
  5. Enjoy with a glass of red wine.
