Quinoa with goat cheese and apricots
A few weeksÂ ago I tried puffed quinoa (and loved it) and it made me curious what ‘normal’ quinoa would taste like. I searched and found quinoa in our regular super market (that was a great win). Even though I amÂ lactose intolerant, I am still able to enjoy goat cheese every now and then… and I did enjoy this lovely salad of quinoa with goat cheese and apricots.
Ingredients for 1:
- 1/2 vegetable stock cube
- 75 gr. quinoa (or 1 cup)
- 150 ml. water (or 2 cups)
- 5Â dried apricots
- 2Â pieces/slices of goat cheese (with honey)
- 2 tbsp. lemon juice
- 1Â tsp. honey
- 4Â tbsp. olive oil
Rinse the quinoa with lukewarm water (to remove its bitterness) with a sieve. Place the quinoa in a pot of water and the vegetable stock. Boil the water and quinoa for 15 minutes. Don’t forget to stir every now and then to prevent it from burning.
From now on there are 2 ways to finish this dish:
1. Add dried apricots to the boiling quinoa the last couple of minutes. Scoop the quinoa and apricots on a place and crumble the goat cheese over it. Chop up the parsley and coriander and mix it with the quinoa. Poor the lime juice honey and olive oil into a small bowl and mix. Scoop the mixed dressing over the quinoa and enjoy!
2. Scoop the boiled quinoa on a plate. Mix the apricots, olive oil, honey and lime juice. Chop up the parsley and coriander and cover the quinoa with it. Top it off with crumbled goat cheese, the apricots and dressing.
