Puffed quinoa peanut butter cups

When I was in Amsterdam I found a biological supermarket called Marqt and discovered puffed quinoa! After enjoying that for breakfast I decided it was time to do something different with it. I have found this amazing recipe for puffed quinoa peanut butter cups (sort of) on the french blog ‘Oh Almonds‘! Love it and had to share this with you!

Ingredients for 10 puffed quinoa peanut butter cups:

  • 5 gr. puffed quinoa
  • 55 gr. peanut butter (room temperature)
  • 100 gr. dark (lactose free) chocolate

You’ll also need:

  • Chocolade moulds

I discovered a trend in my recipes, most of them are fairly simple and easy to prepare! This one is exactly the same.

Put the quinoa and peanut butter in a bowl and mix them together. Melt the chocolate in a different bowl above simmering water. Add a thin layer of chocolate in the mould, fill it up with the quinoa and peanut butter mixture and top it of with chocolate again!

Store in the fridge for at least half an hour and dig in. Love to hear your thoughts on this!
