Poached chicken with lime mayonnaise

Oh I also love this salad of poached chicken with lime mayonnaise! Once I discovered poached chicken I actually eat it a lot! Just because it is super simple, does not require that much of attention and it is really delicious. The original recipe is from a dutch magazine called  Allerhande but I made some small changes to it.

Ingredients for 4:

  • 2 chicken breasts (±400 gr.)
  • 1 cube of vegetable stock
  • 1 lime
  • 4 tbsp. mayonnaise
  • tabasco
  • 15 gr. fresh basil
  • fresh coriander
  • 40 gr. rocket

Start boiling water with the vegetable stock. Once it reaches its boiling point, add the chicken and turn off the stove. Place the lid on the pan and leave it alone for 25 minutes. Take out the chicken to cool it down.

Grate the lime (just the skin), cut into half and squeeze one half. Combine the peel, mayonaise and lime juice, season to taste with pepper, salt and tabasco.

Cut the chicken into thin slices. Rip the basil (the basil stays fresh this way) and mix together with the rocket. Add a couple leaves of coriander.

Divide on four plates, add the chicken and finish it with spreading lime mayo on it! You are now ready to dig in!
