Poached chicken with bacon and avocado

Don’t you feel like organizing a brunch after seeing this picture? I have a special bond with this recipe as I discovered this dish in London. A cross the street from my uni there was this little cafe where they served some proper sandwiches. This was one of them and I loved it. So as I moved back to the Netherlands I decided to create this dish as well as it is too good! Say hello to poached chicken with bacon and avocado.

Ingredients:

  • 1 chicken breast
  • cube of vegetable stock
  • bacon strips (150 gr)
  • 1 avocado
  • 1,5 tbsp. mayonnaise
  • squeeze of lime juice
  • fresh pepper

Put 1 liter water and the cube of vegetable stock into a pan and boil. Once it boils add the chicken, turn off the stove and leave the lid on for about 25 minutes.

Cut the chicken into little cubes and put them into a bowl. Fry the bacon until they are cripsy. Cut the avocado into pieces and stir into the chicken and bacon.

Add the mayonaise and lime juice, season to taste with fresh pepper.

That’s it! You’re done and it’s time to enjoy this poached chicken with bacon and avocado!
