Oven baked avocado: a healthy lunch
Avocado’s are healthy! That’s one thing we know for sure and besides that I think they are delicious too. I’ve been posting a lot of avocado recipes lately (it might have something to do with the amount of avocados I eat) I think I actually eat 3 of them a week? How many do you eat?
Anyways.. avocado’s are hot and happening as I see them in my instagram feed (yes, you can follow me too!) and on facebook they quite trending too. I was looking for a new recipe with avocado and egg as I struggle eating two boiled eggs a day.
That’s why I came up with this delicious recipe. It’s very easy and very tasteful. You can create your own style and choose it you would like to use meat or chives or just everything. Enjoy this recipe for oven baked avocado.
- 2 smallÂ eggs
- Black pepper
- Optional: chives or spring onion
- Optional: bacn
- OvendishÂ or two small bowls (which can fit half an avocado)
How to prepare oven baked avocado:
Preheat the oven to 220 C/ 425 F.
Cut the avocados in half and remove the kernel. Grab a spoon and scoop a little bit of avocado out of each half. You want the entire egg to fit in there!
Place the avocados into a oven dish (you do not want them to roll over). Break the eggs 1 by 1 and try to keep the yolk whole!
Add some salt and pepper. Bake for 10 minutes, the egg white needs to be hardened. Sprinkle the chives, spring onion or bacon (or all of it) over it and leave in the oven for 5 more minutes.
That’s it! You can just grab a spoon and enjoy it or spread it on a sandwich!
