Melon soup with lime, basil and raw ham

When you ask my friends, the melon soup is an absolute favorite! It’s delicious, fresh and very lovely for a summer evening.

Recipe for 4:

  • 1 Galia melon
  • 15 gr. fresh basil
  • 3 ice cubes
  • 2 tbsp. extra vierge olive oil
  • 50 gr. raw ham
  • 1/2 lime
  • Food processer or blender

Cut the melon into pieces, remove the seeds and skin.

Mix the melon, basil, ice cubes and juice from half a lime in the blender or juicer.

Add the oil just before serving the soup. Divide the soup among 4 glasses.

Roll up a piece of ham and stick it into the melon soup like a straw!
