Gluten and lactose free banana bread

Thanks to Jamie Oliver I discover banana bread. It’s like a cake but they call it bread? Anyway.. it’s delicious and as long as you don’t see it as a piece of bread you’ll be fine! The one thing about that banana bread was the fact that it had gluten in it. So I created a gluten and lactose free banana bread. I also wanted to do something special with it so I added a bit of chocolate! Here we go:

Ingredients for 1 cake:

  • 200 gr. white caster sugar (fine sugar used for baking)
  • 250 gr. gluten free flour (I use Mehl from Schär)
  • 16 gr. baking powder
  • 1 tsp. ground cinnamon
  • 100 gr. vegetable butter
  • 8 gr. vanilla sugar
  • 2 large eggs
  • 125 ml. Alpro Soja Cuisine (or something lactose free that’s similar to cream)
  • 300 gr. ripe bananas (peeled)
  • 100 gr. dark chocolate
  • pinch of salt

You will need:

  • Sieve
  • Baking tray (cake shape)

Preheat te oven to 180 degrees and cover the baking tray with parchment paper.

Sieve the flower, cinnamon, baking powder and salt in a large bowl.

Mix the butter, vanilla sugar and caster sugar in a separate bowl until its smooth. Add the eggs one by one follower by the Alpro Soja cuisine. Scoop through the flower mixture.

Grab another bowl and mash the bananas until its a smooth mixture. Scoop through the rest.

Poor everything into the baking tray and place it in the oven for ±60 minutes.

Let the cake cool down!

Melt the chocolate in a bowl above simmering water. Once is completely melted poor in on top of the cake. Take a spoon and spread it on the top of the cake (it will slowly cover part of the side as well, that’s ok). Let it cool down.
