Hummus with spinach on bread: gluten free lunch

A day after launching my site I already received question about lunch as people were curious what I eat for lunch with my intolerances. Well, I have always been a huge fan of bread. But in order to fill my need to be a bit more healthy (eating more veggies) and that’s why I choose this quite often: hummus with spinach!

Ingredients for sandwich with hummus with spinach:

  • Hummus (I absolutely love lemon and coriander hummus)
  • Fresh spinach
  • Gluten free bread

This recipe is quite easy. Place the gluten free bread under the grill for 5 minutes, spread hummus on top of it and cover it up with fresh spinach! That’s it! Quick, easy and delicious!
