Gluten free lunch: Hummus and tomato tapenade
“What on earth do you eat for lunch when you can’t have gluten and dairy?” Do you guys get these questions too or is it just me and my friends who are utterly confused? I must admit I eat a lot of salads, soups and other things but when I eat gluten free bread I rather have a delicious sandwich. Who knew that the combination of hummus and tomato tapenade is actually really good? (Some of you probably knew.. please tell me if you happen to know GREAT combinations). So hummus and tomato tapenade…Â Such a lovely combination especially if you top it off with some fresh tomatoes and cucumber. Yummy!
- 2 slices gluten free bread
- hummus (I love the ones with coriander and lime/lemon)
- tapenade (tomato or olive)
Spread the hummus on one slice and the tapenade on the other. Cut the tomato and cucumber in slices and place them on a sandwich. Place the other piece of breadÂ on top and you can enjoy your hummus and tomato tapenadeÂ sandwich!
