Gluten and lactose free chocolate cake with raspberries

If you’re thinking about chocolate pie there’s a chance you’re thinking about the movie ‘Mathilde’ where a boy has to eat a very rich looking lactose free chocolate cake! I had to share this recipe with you so that you can make this very delicious gluten and lactose free chocolate cake yourself. I hope you’re not on a diet cause you’ll want to eat this.

Ingredients for 1 cake (±10 servings):

  • 200 gr. dark chocolate (make sure its lactose free)
  • 50 gr. vegetable butter
  • 4 eggs
  • 200 gr. granulated sugar
  • 2 tbsp. cocoa powder
  • 2 tbsp. gluten free flower (I used Kuchen & Kekse by Schär)
  • 1 tsp. baking powder
  • Raspberry jam

Pre heat the oven to 180 C° degrees (350 °F), cover a baking tray in parchment paper and grease it.

Melt the chocolate and butter together in a bowl above simmering water.

Separate the yolk from the eggwhites. Mix the yolk together with 100 gr. sugar for 5 minutes. Add the cocoa, flower and baking powder and finally the mixture of chocolate and butter.

Put the egg whites with the other 100 gr. sugar in a separate bowl and beat until stiff. Scoop this mixture into the chocolate mixture.

Bake the cake in ±40 minutes.

Let it cool down and spread the raspberry jelly/jam on top of the cake.

VARIATION: the picture shows a double cake (you either cut in in half or bake 2 of them).
