Crumble in an orange filled with cream cheese
In the Netherlands glutenfree pastries are very uncommon and if you find one, they are not that good. So if I want something nice I have to make it myself! I found this recipe for a crumble in an orange, filled with cream cheese! I adjusted the recipe to make it gluten and lactose free!
IngredientsÂ for 4 pieces:
- 5 oranges
- 1 lemon
- 60 almonds or hazelnuts
- 125 gr. gluten free flower (I used SchÃ¤r Mehl)
- 60 gr. light caster sugar
- 60 gr. cold fluid butter (I used vegetable butter)
- 100 gr. lactose free cream cheese
- 2 tbsp. honey
- 2 eggs
Preheat the oven to 180 degrees. Grate the skin of 1 orange. Take the other 4 oranges and cut the tops off. Remove the pulp (this is a bit messy) and save the juice (you’ll need this later on).
If your oranges keep rolling over just cut a tiny bit of the bottom just to keep them in their place. You can also place them in a small oven dish against each other (to prevent them from rolling over).
Roast the nuts or almonds. Mix the flower, nuts and sugar. Make sure you have cold hands when you rub the butter through the mixture. Stop when it look like crumbs!
Chop the pulp of 2 oranges and mix this together with the cream cheese, Â grated zest, honey and 1 egg.
Fill up the oranges with the cream cheese mixture and divide the crumbs among them. Mix the other egg and carefully drip it onto the crumbs (do not soak them in egg, but cover it slightly).
Bake in Â±30 minutes and enjoy your crumble in an orange!
