For the past couple of weeks I’ve really stepped up my breakfast game as I enjoy fresh fruit, veggies and super foods almost every morning! But every now and then I love something sweet for breakfast, does anyone recognize that feeling? Banana pancakes are trending on Instagram (you should follow me!) and I found out that its a must have for every foodie. But wait.. banana pancakes? Does that count as healthy? I would say sort of. I created and tested this recipe for you multiple times and I love to hear your opinion!
- 1 banana
- 2 eggs
- 2Â tbsp rice flour
- coconut oil
As IÂ make smoothies all the time my blender is always ready for operation! Just put the banana, eggs and flour in the blender and mix until smooth. Take a bit of coconut oil and melt it in the pancake pan. Add the pancake batter when the coconut oil melted. Just keep in mind that these kind of pancakes burn easily! Turn them as soon as the top just left the fluid state.
I love serving these with some fruit or raising and a bit of honey or agave nectar!
