Banana crackers with linseed

Since I had severe food poisoning my body doesn’t really like sugars anymore. Besides that I just don’t have a lot of energy and some serious annoying mood swings! Time to lower my daily sugar intake to stabilize the sugar count in my blood! With these issues in mind I went to an orthomolecular therapist who told me to eat sugar free (by sugar free she meant: no real sugar, no oats or anything, 1 time a day I could have fruit combined with seeds and I had to eat loads of veggies and egg whites). I’m always up for trying something new but it has to taste good! I definitely wanted to enjoy my breakfast so I started searching recipes with fruit and seeds in it. Suddenly there was this fantastic recipe at ‘Undressed Skeleton‘: Banana crackers with linseed! Super simple and super nice.



  • 1 ripe banana
  • 60 grams or 1/2 cup broken linseed
  • coconut oil

Pre heat the oven to 180 C/350 F.

Peal the banana, place it in a bowl and start making a banana puree with a fork (or hand mixer). Add the linseed and stir until it’s mixed well.

Cover a baking tray with parchment paper and grease it with a little bit of coconut oil.

Scoop with an ice scoop the mixture onto the baking tray and flatten them a little. Place the tray in the oven for about 15 to 20 minutes (this kan really differ per oven so keep an eye on them).

Before you take them from the oven just make sure you find them firm enough.

I love to have these crackers (especially when you top them off with fresh strawberries) for breakfast!
